2 C diced new potatoes
2 C trimmed green beans
2 plum tomatoes chopped
1-2 garlic cloves minced (1 is plenty but we LOVE garlic!)
1 bay leaf
1 tsp sea salt
1 tsp black pepper
1/2 tsp rosemary
1/2 tsp red pepper flakes*optional
Heat 1 TBSP olive oil in saute pan on medium
Add garlic and saute for 30seconds-1 minute (DON'T let it burn!)
Add potatoes & beans, saute for 2 minutes.
Add 1/4 C water, tomatoes, bay leaf, salt & pepper.
Cover, reduce to slow simmer.
Simmer for about 5 minutes or until potatoes are cooked.
Add red pepper flakes if desired.
Serve!
This would also be good with Spanish flavors-cilantro, chili powder, maybe cumin? Or Greek flavors-oregano, lemon...mmm think I might try that one next!
